Lockdown Chow down - Make something of it! (Recipe 5)

Edgewater’s Reuben Sandwich



Ingredients

 

The Sandwich

500g good quality cooked corned beef

Sliced onion and carrot

4 slices of light rye bread

4 slices Swiss cheese  

200g sauerkraut                  

8 slices of McClure’s pickles

Butter for toasting

 

Russian Dressing

100g good quality mayonnaise 

20g Heinz ketchup 

20ml Worcestershire sauce        

½ teaspoon tabasco sauce

½ teaspoon paprika

½ teaspoon of sea salt

 

Directions

 

1. Place sliced onion and carrots in a medium saucepan with water and bring to a boil, add the corned beef, then turn the heat down to simmer for 30 minutes.

2. Make the dressing by mixing all ingredients and refrigerate until needed.

3. After 30 minutes remove the corned beef from the saucepan, allow to cool slightly before slicing as thinly as possible.

4. Remove dressing from the refrigerator and spread on each slice of rye bread followed by the warm sliced beef, cheese, sauerkraut & pickles.

5. Put sandwiches together and butter the outside & toast in a sandwich press until golden and melting.

6. Cut, serve and enjoy.
